I'm looking for a QlikView reference.
I don't want the API Reference but a good manual that explain how QlikView works in the details.
I'm speaking about how to realy develop professional QlikView documents.
I hope you can help me to found something because I can found anything over internet.

The QlikView Reference Manual should have been installed when you installed QlikView. It goes in depth on all things QlikView. It can be found in the Documentation folder in the directory you installed QlikView. They really should automatically add a link to it in the Start Menu entry (if they don't already).
As for "how to really develop professional QlikView documents", that goes far beyond what a reference manual could tell you. Really, it goes beyond what any one book is likely to tell you. In addition to solid QlikView skills, it helps to have a good understanding of database design, data warehouse design, user interface design, how to best display information, and so on. That simply won't all be written down in one place for easy use by a QlikView developer.
So you're looking at multiple sources of information. I'm not sure what to suggest for database or data warehouse design - it's been way too long since I've had any formal education in database design, and I've actually had NO formal education in data warehouse design.
For displaying information, although I disagreed with him on many points, I got quite a lot out of reading a couple of Stephen Few's books. One of them was specifically on dashboard design. The other was more general-purpose and more comprehensive. I don't remember the names. And there are other experts in that field with their own books that you could read.
Then I think the QlikView reference manual, the help text, and the forum are good places to get the technical information you need to convert everything you've learned into reality.
