We (Qlik Admins) upgraded to Qlik Sense Enterprise May 2023 [Patch 16 Currently] (from Feb 2022) over a year ago now and just recently Developers have highlighted an issue where: 'Qlik Straight Tables are no longer displaying length text values, instead they are truncating at three lines of data.'
I've tried to find an answer in release notes or doco as to why this is now occurring since the upgrade and can't find anything.

The above mentions it for Qlik Sense 2019 and newer, and suggests using Straight Tables which the developers are using.
There does not appear to be an option to expand the columns with the straight tables as per the above article
Example below
The "old/traditional" straight table (i.e. not the new one in the visualization bundle) has an option where you can set a fixed amount of lines, under chart styling. But it's not flexible, if you assign your own value all rows will have that height even if cell contents for a specific row doesn't require it.
This suggests that it may not be possible: Solved: Allow more than 3 lines for a table cell - Qlik Community - 1737413
It looks like there was a workaround using CSS and the multi KPI, which doesn't work with the new straight table. You may have to settle for adding a note in the table subheading to advise users that full text is only visible on hover.

Thank you for that, the developers are happy with that as a solution.
As of the May 2025 release for on-premise the same styling is available for the newer Straight Table object as well.
