I am too as well not able to find the complete info about 'export data'. In the operation monitor 'Log details' sheet, if we search 'Export Excel' in the Command column, it shows entries of data export but doesn't show App name and Object title, the way it shows in export summary sheet.
I enabled Audit info logging as mentioned in this post, but it didn't make any difference -
