How can I turn the dimension title for my pivot table ?

Unless something has changed semi-recently, there's no native option to do this.

You can presumably use CSS override to get this done - there's a good write-up here:

For what it's worth, the vertical aligned headers are harder for me to read and kind of painful to look at, but that's your call.
