Dear community,
I've been assigned to be our latest BI specialist within the company I am currently working for.
To get a feel about the importance of QV within the organisation, I want to know who, when and what a user does with our QV document.
I tried google and the community here but no luck so far.
Is there a tool, or script available that lets you see all these statistics?

Then you look into Session and/or Audit logs for QlikView server.
Audit logging is not enabled by default and can be enabled in QMC under Setup > QlikView Server > Logging.
Logs are per default found : C:\ProgramData\QlikTech\QlikViewServer

Are they opeing via Accesspoint, or do they open file local on disc with QlikView Desktop?

It's all in Audit_<server_name>_YYY-MM-DD.log files on your server (by default in ProgramData\QlikTech\QlikViewServer folder)

They open it via a webbrowser, so via the Accesspoint.

As Lukasz Mastalerz says, this info is in the audit logs. You can see who accessed a particular file, how long the session was, how many selections were made, browser type, CAL type, Machine ID, Client IP etc., etc.
You need the "Governance Dashboard" from QlikTech. Download and install it.
Then you look into Session and/or Audit logs for QlikView server.
