If you have section access on your document you can switch off the features on the toolbar in setting>document properties>security

You will need to play round to find out what functions you need but I usually only leave a tick in Macro Override Security and Admin Override Security.

If you´re using Ajax, try this document extension NoToolbar.qar

The document extension is the easiest way to do it, unless you want to edit opendoc.htm, which can start to get complicated, unless you want to hide the toolbar in all applications on the server.
